How Kill Floor Carcass Tracking Works
In the barn, Symphony creates receiving lots, records producer and truck details, weighs animals, and assigns pens. It prints lot tracking tags for scanning on the kill floor, ensuring accurate lot identification throughout processing.
Symphony records key animal identifiers, such as ear tags or tattoo numbers, based on species. These identifiers link each animal or lot to its kill floor data.
Different data can be recorded against the carcasses depending on the animal species. Most commonly, meat processors want to capture weights at various stages like the live weight, hot weight, and cold weight. Others choose to capture more data like carcass grading information.
Symphony consolidates all carcass data and enables sorting for various purposes. Processors can route carcasses through specialized equipment, such as back-fin machines, or organize them as they enter the cooler for efficient processing.
Carlisle Technology uses its iCap solution on the plant floor to capture data such as weights, grades, and to control the sortation. iCap is a robust thick-client application with its own database, allowing kill floor operations to continue during network outages. All data syncs to the main Symphony server for centralized reporting.
